Soy chai

Makes 4 small cups

500ml cold water
2 black tea bags
1 tsp cinnamon powder
1 tsp powdered ginger
2 whole cloves
4 cardamom pods, lightly crushed
10 turns black pepper mill
250ml soy milk
8 tsp granulated white sugar

Pour the water into a saucepan and add the tea, cinammon, ginger, cloves, cardamom and pepper. Bring to a boil over a high heat, stirring to combine, and then turn the heat to low and simmer for 10 minutes, stirring occasionally.

Add the soy milk and sugar, turn the heat to medium-low and slowly bring the temperature up. When you start to see tiny bubbles forming around the edge of the plan, take the pan off the heat and drink!
